Harvesting the yacons. Still flowering too……. due to the continuing rain.

Great contributor to the diet. I cut into rings, pan fry in very little oil, to prevent sticking, until beautifully brown and serve.

Other use is in stir fry, chunks tossed through the onion and garlic stage , greens of choice, I use everything I can from the gardens, from mustard leaves to spinach and kale. Marinated in ginger and turmeric, cubes of tofu I add. The yacon provides a nutty sweet contrast with bite.

In a fruit mix with pineapple, tamarillo and yacon, topped with vanilla bean ice cream. Yum.

Or just as it comes out of the ground, like a watery sweet apple, hints of other flavours, like celery. Refreshment in a tuber.
